## Introduction/Description
Welcome to Mom’s Dosa, your go-to spot in Cloverdale for authentic Indian dishes! Today, we’re excited to share a classic Indian recipe that brings joy to every meal—**Poori Bhaji**. This delightful dish consists of fluffy, deep-fried bread (pooris) served with a spiced potato curry (bhaji). Perfect for breakfast, lunch, or a festive gathering, Poori Bhaji is loved by both kids and adults alike. While this recipe offers a glimpse into the flavors of our restaurant, keep in mind that it may not be identical to the Poori Bhaji served at Mom’s Dosa.

## Ingredients List

### For Pooris:
– 2 cups whole wheat flour
– 1 teaspoon semolina (optional, for crunch)
– 1 teaspoon salt
– 1 tablespoon oil (for dough)
– Water (as needed)
– Oil (for deep frying)

### For Bhaji:
– 3 medium potatoes (boiled and mashed)
– 1 onion (finely chopped)
– 2 green chilies (slit open)
– 1 teaspoon ginger (grated)
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– ½ teaspoon turmeric powder
– Salt (to taste)
– 2 tablespoons oil
– Fresh coriander leaves (for garnish)
– Lemon wedges (for serving)

## Instructions/Steps

### Making Pooris:
1. In a mixing bowl, combine the whole wheat flour, semolina, and salt.
2. Add 1 tablespoon of oil and mix well.
3. Gradually add water to form a soft dough. Knead for about 5 minutes until smooth.
4. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
5. After resting, divide the dough into small portions and roll each portion into a ball.
6. Flatten each ball with a rolling pin into a small disk, about 2-3 inches in diameter.
7. Heat oil in a frying pan over medium heat. Once hot, gently slide in the rolled-out pooris.
8. Fry until puffed and golden brown on both sides. Remove and place on paper towels to drain excess oil.

### Making Bhaji:
1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, letting them splutter.
2. Add chopped onions and sauté until translucent.
3. Stir in grated ginger and slit green chilies, cooking for another minute.
4. Add the mashed potatoes, turmeric powder, and salt. Mix well and cook for about 5-7 minutes over low heat.
5. Sprinkle fresh coriander leaves and mix gently. Remove from heat.

### Serving:
1. Serve hot Pooris with the Bhaji on the side, garnishing with additional coriander and lemon wedges.

## Tips and Variations
– **For Fluffier Pooris:** Ensure the oil is hot enough before frying. If it’s too hot, the pooris will brown too quickly without puffing up.
– **Spice Level:** Adjust the number of green chilies in the bhaji according to your taste.
– **Add Veggies:** Consider adding peas or carrots to the bhaji for extra nutrition and flavor.
– **Chaat Twist:** Serve the bhaji with a side of tamarind chutney for a different flavor experience!
