## Ingredients List
For the Samosa Dough:
– 2 cups all-purpose flour (maida)
– 4 tablespoons oil (ghee or vegetable oil)
– 1/2 teaspoon carom seeds (ajwain)
– 1/2 teaspoon salt
– Water (as needed)

For the Samosa Filling:
– 2 large potatoes (boiled and mashed)
– 1/2 cup green peas (boiled)
– 1 tablespoon oil
– 1 teaspoon cumin seeds
– 1 teaspoon ginger (grated)
– 1-2 green chilies (finely chopped)
– 1 teaspoon garam masala
– 1 teaspoon coriander powder
– 1/2 teaspoon cumin powder
– Salt to taste
– Fresh cilantro (chopped, for garnish)
– Lemon juice (to taste)

For Frying:
– Oil (for deep frying)

## Instructions/Steps

### Making the Samosa Dough:
1. In a bowl, combine the all-purpose flour, carom seeds, and salt. Mix well.
2. Add in the oil and rub it into the flour until the mixture resembles breadcrumbs.
3. Gradually add water, kneading to form a smooth and firm dough. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

### Preparing the Samosa Filling:
1. Heat one tablespoon of oil in a pan over medium heat.
2. Add cumin seeds and let them splutter.
3. Add grated ginger and chopped green chilies. Sauté for a minute until fragrant.
4. Stir in the mashed potatoes, green peas, garam masala, coriander powder, cumin powder, and salt. Mix well.
5. Remove from heat, add fresh cilantro and a squeeze of lemon juice. Let the filling cool.

### Assembling the Samosas:
1. Divide the rested dough into small balls (about the size of a golf ball).
2. Roll each ball into a thin oval shape, about 6 inches long.
3. Cut the oval in half to form two semi-circles.
4. Take one semi-circle, and form a cone by folding it over. Seal the edge with a little water.
5. Fill the cone with the potato-pea filling and seal the top completely by pressing the edges together. Repeat for the remaining dough and filling.

### Frying the Samosas:
1. Heat oil in a deep frying pan over medium heat.
2. Once the oil is hot, carefully drop in the prepared samosas in batches.
3. Fry until they are golden brown and crispy, turning occasionally to cook evenly.
4. Remove the samosas and place them on paper towels to absorb excess oil.
